Hey everyone, I hope you are having an amazing day today. Today, we’re going to prepare a special dish, enchiladas. One of my favorites food recipes. This time, I’m gonna make it a bit unique. This is gonna smell and look delicious.

Enchiladas is one of the most favored of current trending foods on earth. It is appreciated by millions daily. It’s simple, it is quick, it tastes delicious. They’re nice and they look wonderful. Enchiladas is something which I have loved my entire life.

I've begun making my enchiladas casserole style, which saves a lot time, not to mention burned fingers. :) However, everyone still raves over my enchiladas, and this recipe recently earned a round of applause when I made them on a skiing holiday. The sauce is actually a modified Alfredo recipe and is also great over fajitas. Spread a layer of the sauce on the bottom of the dish before inserting the enchiladas to prevent them from sticking.

To begin with this recipe, we have to first prepare a few ingredients. You can have enchiladas using 14 ingredients and 19 steps. Here is how you can achieve it.

The ingredients needed to make Enchiladas:

  1. Prepare 3 clove garlic
  2. Take 2 tbsp chili powder
  3. Prepare 2 tsp ground coriander
  4. Get 2 tsp ground cumin
  5. Take 1 tsp sugar
  6. Make ready 1 salt
  7. Get 1 1/4 lb top blade steak or ground beef
  8. Take 1 tbsp vegetable oil
  9. Make ready 2 medium onions, diced
  10. Get 1 can tomato sauce, 15 ounce
  11. Prepare 3/4 cup water
  12. Take 2 cup sharp cheddar cheese
  13. Prepare 1/3 cup chopped cilantro
  14. Take 10 to 12 six inch corn tortillas

This easy recipe for Tex-Mex cheese enchiladas is a family favorite! Just lightly fry corn tortillas, roll them up with Jack or cheddar cheese, cover with a tomato and green chile sauce, more cheese, and bake. Pour in the red sauce, chicken broth, cilantro, salt and pepper. They can be prepared simply with just cheese, or be spruced up by adding a little bit of beef or chicken to appeal to the meat-eaters in your household.

Instructions to make Enchiladas:

  1. cut center strip of grissle out of each steak
  2. pat each steak with paper towels then sprinkle with salt
  3. heat oil over medium high heat in large pot until shimmering, cook steak until browned on both sides, about 6 minutes
  4. remove meat from pot and add onions
  5. reduce heat to medium and cook until golden, about 5 minutes
  6. while onions are cooking, combine garlic, chili powder, coriander, cumin, sugar and one teaspoon salt in small food processor and pulse until finely chopped and mixed well
  7. add garlic mixture to onions and cook about 1 minute
  8. add tomato sauce and water and bring to boil
  9. reduce heat, return meat and any drippings back to pot, cover and simmer about 1 1/2 hours
  10. if using ground beef, follow the same procedure, but only simmer for 15 minutes. Ground beef will absorb liquid so increase water to 1 3/4 cups.
  11. preheat oven to 350 and make sure rack is in the middle position
  12. strain sauce mixture over medium bowl to extract as much sauce from the meat as possible
  13. use forks to completely shred beef, then mix in 1 cup cheese and cilantro
  14. spread enough sauce to cover the bottom of a 13 x 9 inch baking dish
  15. heat tortillas in microwave for 1 minute
  16. spread 1/3 cup beef mixture in center of each tortilla and roll tightly
  17. repeat process until all the filling has been used
  18. pour remaining sauce over enchiladas
  19. sprinkle remaining cheese over top, then cover with foil and bake for 20 minutes, remove foil and continue cooking for 5 to 10 minutes or until cheese browns

When the enchiladas are completely cooled, scoop the enchiladas into a freezer-safe or an aluminum foil container. Cover the container with plastic wrap and aluminum foil. To freeze individual enchiladas, freeze the sauce on the side and wrap each enchilada tightly in plastic wrap before wrapping them in aluminum foil. Arrange the enchiladas in a baking dish. You can either place the chicken enchiladas seam-side-up or seam-side-down.
