  1. Get 6 egg whites

  1. Pre-heat the oven to 120C.
  2. Mark a 20cm circle onto a baking paper.
  3. Whisk the egg whites on high speed in a mixer with the cream of tartar. Gradually add the caster sugar, once it reaches a medium to firm peak, add the vinegar, cornflour and vanilla remove from the mixer.
  4. Spread the meringue inside the circle. Bake for 1 hour and 15 minutes. Turn off the oven to cool all night in the oven.
  5. Beat the thickening cream with 2-3 teaspoons caster sugar. Spread it on top and garnish with strawberries, cherries, raspberries, cranberries, mango or any fruit you like.Effie xx
