Place tomatoes and olive oil on a jelly-roll pan; toss. I served it as a salad with a Hot Butter Chicken dish and it was just perfect to offset some of. Clean asparagus - toss asparagus, bread cubes and tomatoes with olive oil, salt and pepper. Arrange on platter and top with vinaigrette, feta and chives. Not a fan of traditional leafy salads?
