Chicken Schezwan Fried Rice is a Chinese rice preparation made using a blend of long grained rice, onions, carrot and french beans with a lot of Chinese flavors. Now add the schezwan sauce, fried chicken, roasted cashews or peanuts, vinegar, tomato sauce if using, chili-garlic sauce if using, water and sugar. Simmer until gravy thickens or add water if thin consistency required. Serve the schezwan chicken hot with triple schezwan chicken, fried rice.

  1. Wash and pat dry.Marinate the cubed chicken with vinegar, soya sauce black pepper powder, ginger garlic paste, corn flour and salt keep it for 10 mins. Slice the onions,capsicum, cabbage and chop the spring onion finely. Cook the rice and keep aside
  2. Heat oil in a kadai add ginger garlic paste saute for few mins, add the sliced onions and capsicum saute it for a few mins. Then add tne maŕinated chicken mix well,cover and cook till chicken is tender
  3. Grind the soaked red chillies with a little water and make a paste,then add vinegar,tomato ketchup, soya sauce, black pepper powder and salt mix it well, add this to the cooked chicken and fry it for a few mins add little water if to dry
  4. Then mix the cooked rice gently in the chicken masala add spring onions and simmer for few mins on medium flame. Garnish with spring onion greens
