  1. Get 2-3 whole pears
  2. Make ready 150 gm softened butter
  3. Make ready 160 gm brown sugar
  4. Take 125 gm ground walnuts (can be blitzed in food processor)
  5. Take 120 gm plain flour
  6. Make ready 1.5 tsp baking powder
  7. Get 3 eggs
  8. Get 1/2 tsp vanilla paste
  9. Take 1 pinch salt

The topping is made first and put in the bottom of the pie pan. The cake is added next and baked until golden brown. Place the walnut halves between each pear half. To make the sponge batter, cream the butter and sugar until light and fluffy.

Steps to make Pear and Walnut Cake:

  1. Wash and dry your imperfect pears
  2. Pre heat oven to 180 degrees
  3. Grease and flour a loaf pan and line with baking paper
  4. Mix butter with the sugar, salt and vanilla for 3-4 mins with a hand mixer
  5. Mix in eggs one after another
  6. Mix the flour, baking powder and ground walnuts together and add to the batter
  7. Pour mixture into loaf pan and push the pears into the batter
  8. Place in the oven and bake for 55 mins and until a skewer comes out clean (Note the pear juice will cause the cake to be moist)
  9. Allow to cool well (approx 40 mins) and serve!

Remove from the oven and cool at least. This is similar to pan d'Espanya (Spanish bread), which is what Sephardic Jews call sponge cake. Brushing the honey-orange syrup over the warm cake infuses it with moisture and delicate aromas. What goes well with caramel and pears? At least those are the associations my brain made anyway.
