Halloumi is one of my favourite things to add to a salad. Especially when I'm trying to go meat free, halloumi is pretty much indispensable. And preferably at least one carb. This halloumi, sweet potato and bulgur wheat salad is pretty much my perfect salad.

Instructions to make Bulgur Salad with Halloumi:

  1. Cook the bulgur according to package instructions.
  2. In the meantime, in a big bowl mix chopped coriander, diced cucumber, quartered cherry tomatoes and diced bell pepper.
  3. Prepare the sauce by mixing 2tbsp olive oil, 1 tbsp lemon juice and 1 tsp dijon mustard.
  4. Add the cooked bulgur, sauce, salt and pepper to the bowl and mix.
  5. Heat some olive oil in a pan. Add sliced halloumi and cook 3-4 minutes on each side. Serve with the salad.

There is green though so it totally counts as. A satisfying vegetarian salad of contrasting flavours and textures. The salty cheese is cooled by crisp, sweet watermelon. Toss the halloumi and courgette batons with the remaining oil. Remove from the pan and toss through the salad.
