This Authentic Hungarian goulash is a traditional beef stew cooked with lots of onions, Hungarian paprika, tomatoes and sweet peppers. Very popular in Hungary but also in other parts of Eastern Europe, like Transylvania, this stew can be served with bread , pasta, spaetzle, boiled or roasted potatoes and pickles.

Steps to make Amazing Beef Goulash:

  1. Heat Oil in a large Casserole over medium high heat and fry the Bacon for 5 to 10 minutes. Using a slotted spoon remove Bacon from the casserole and set Bacon aside.
  2. In small batches, brown the Beef in bacon fat. Remove browned Beef and set aside with Bacon.
  3. Reduce heat to medium and melt Butter. Add Onion and Garlic and sauté for 5 minutes. Stir in the Flour, Caraway Seeds, Paprika and Chilli flakes. Stir for 2 minutes until all the Flour is dissolved.
  4. Whisk in Vinegar and Tomatoes, the mixture should be very thick.
  5. Pour in beef Stock, Beer, Salt, Water, Bell Pepper, Lintels and reserved Bacon and Beef. Bring to boil, reduce heat to low and simmer covered for 45 minutes.
  6. Stir in Potatoes, Aubergine, Celery and Carrots and continue to simmer for 30 more minutes or until the vegetable are tender. Add Cabbage and Peas and simmer for 5 more minutes.
  7. To take the dish to the next level, allow the soup to cool slightly, then refrigerate overnight and reheat before serving.

American and Hungarian Goulash are two entirely different recipes. Based on this recipe I found from Taste of Home here are the ingredients you'll find in the Hungarian version that you will not find in the American version: carrots, green peppers, stew meat (in place of ground beef), beef broth, paprika, caraway seeds and sour cream. She called the beef dish goulash and made with chicken it was paprikas. For goulash she used stewing beef, or similar cut, say one or one and a half pounds. She chopped onions equal in bulk to the beef.
