Instructions to make Toor Dal Biryani:

  1. Wash rice, soak it for 2 hours. In a vessel, boil toor daal till half done.
  2. In a big pan, add water, 2 tbsp oil, all spices, salt and soaked rice. Cook till 70% done. Drain excess water.
  3. In another pan, add remaining oil, curry leaves, onion and cook until soft. Add tomatoes, ginger-garlic paste and cook for 5 minutes. Add salt, chilli powder, turmeric powder, garam masala powder and mix well. Add cooked daal, mint leaves, corinader leaves. Mix well. Cook for 5 minutes. Keep aside.
  4. In a microwavable bowl, make layers of rice than layer of dal. Again layer of rice. Sprinkle fried onions, some coriander leaves and saffron. Add lemon juice. Microwave it for 10 minutes.
  5. Serve hot.

I have never met Mahjabeen-ji personally but seem to know her well through the lovely dishes I taste. Palak Biryani Palak Biryani (spinach rice) is not only an easy to prepare vegetarian rice dish but also a healthy way to get all goodness of spinach.
