  1. Get 6 cup Basmati rice
  2. Get 3-4 tblspn Ghee
  3. Make ready 6-7 cloves
  4. Get 2-3 Cinnamon stick

  6. Get Aa needed Cashews
  7. Take Few golden raisins
  8. Get 1 Bay leaf
  9. Take as needed Oil
  10. Take 1 cup curd
  11. Get 1 cup carrot (chopped)
  12. Get 1 cup butter beans (chopped)
  13. Get 1 cup Green peas
  14. Make ready Aa needed fried onion for garnish
  15. Make ready As needed Mint leaves for garnish
  16. Take 1 tbsp Garam masala
  17. Take 1 tbsp Turmeric powder
  18. Take 1 cup coconut milk
  19. Make ready Green Gravy
  20. Prepare 2 cup chopped coriander leaves
  21. Prepare 1 cup Mint leaves
  22. Prepare 1/4 cup Garlic
  23. Prepare 1-2 Onion
  24. Get 1 small piece of ginger
  25. Get 2 green chillies

Add some mint leaves, coriander leaves, and fried shallots. Cook the rice over very low heat. Add more fried onion, mint leaves and coriander leaves on top of the rice and cover with a tight. Pudina Biryani / Spicy Mint Biriyani (Without Vegetable or Meat), another flavorful biryani made with fresh ground mint paste and biryani masala.

Instructions to make Vegetable Mint Biriyani:

  1. For green gravy, grind all ingredients together and keep it ready.
  2. Take a pan. Add oil and ghee. Add all dry masala, turmeric and garam masala. Add green gravy, curd and all vegetables. Let it cook on low flame.
  3. Take a another vessel. Cook rice in that with salt. Don't overcook. Once it is half done, drain the water and let it cool.
  4. Add rice in the green gravy. Cook it on low flame. Add coconut milk. After some time, mix it gently. Sprinkle fried onion and mint leaves.
  5. Serve hot with Raita and papad - (see recipe)
  6. Note : I've prepared in rice cooker. If you are cooking in pressure cooker. Don't give whistles. It taste great next day. So if you are having biriyani today and if there is leftover, keep it in fridge. Next day, make it hot again.

The cooking procedure is very similar to Kuska preparation, but the quantity of mint varies. And i have also not used veg/non-veg stock or coconut milk here.
